Ingredients
- 4 lb - Beef round (any cuts)
- 2 tbsp - Chili powder
- 1 tbsp - Ancho chile
- 1 tbsp - Ground cayenne
- 1 tbsp - Onion powder
- 1 tbsp - Garlic powder
- 1 tbsp - Black pepper
- ½ cup - Honey
- 2 tbsp - Worcestershire sauce
- ½ cup - Soy sauce
- Juice and zest from 2 limes
You will also need
Oak and apple wood chunks for smoking
Skewers (optional)
Preparation
- Mix all the ingredients except the beef into a bowl;
- Cut the beef roast into thin slices of about 1/8 to 1/4 inches thick, then put the slices into the marinade and let them marinate for 4 to 6 hours;
- Preheat your smoker for about 200 to 225°F;
- Remove the beef slices from the marinade – If you want to maximize space in your smoker you can thread each beef slices onto skewers and have them hang vertically below the grill grate (see video);
- Smoke for 4 to 5 hours using oak and apple wood chunks.
