Ingredients
- 20 Chicken wings
- 2 tbsp - El Yucateco XXXtra Hot Sauce
- ⅓ cup - Sugar
- ¼ cup - Scallions, chopped
- 1 Garlic clove, minced
- 1 ½ tbsp - Dried thyme
- 1 tbsp - Paprika
- 1 tbsp - Allspice
- 1 tbsp - Ground ginger
- 1 tbsp - Salt
- ½ tbsp - Ground black pepper
- 1 tsp - Ground cinnamon
- ½ tsp - Ground nutmeg
- ¼ cup - Olive oil
- Juice from 1 lime
Preparation
- In a bowl, mix the chicken wings with olive oil until they are coated evenly; Mix all remaining ingredients together then apply on the wings; Let marinate 2 to 4 hours;
- Preheat your grill for a two zone cooking having hot coals on one end and nothing on the other;
- Place the chicken wings on the hot grate over direct heat and sear for 3 to 4 minutes per side; Move the wings to indirect and close the lid; Cooking time: 30 to 45 minutes at 350°F;
- Remove the chicken wings from the grill and serve;
