Ingredients
Meat Bowls
- 1 lb - Sausage meat
- 4 Slices of bacon
- 4 Eggs
- Freshly ground black pepper
- Cheddar cheese in slices
- Red onions
- English muffins
- Baked beans (optional)
Chipotle Smoked Potatoes
- 4 Russet potatoes
- ¼ cup - Vegetable oil
- 1 tbsp - Chipotle powder
- ½ tbsp - Dried oregano
- ½ tbsp - Black pepper
- ½ tbsp - Salt
You will also need:
Apple wood chips, soaked into water for 1 hour
Preparation
- Preheat your grill for indirect cooking;
- Cut the potatoes into slices of half inch thick and baste both side with vegetable oil. Mix the chipotle powder, oregano, salt and pepper together and sprinkle over the sliced potatoes;
- Split the sausage meat into equal patties and shape them in the form of a bowl that have about 1 inch deep. Wrap each bowl with a bacon slice;
- Toss a handful of soaked apple wood chips onto hot coals and cook the meat bowls and potatoes in indirect for 20 to 30 minutes at about 350°F;
- Once the bacon is starting to crisp and the potatoes are becoming tender, crack an egg into each meat bowls and cook for 5 to 10 more minutes, it’s also a good time to add a skillet full of baked beans if you’d like to have some;
- Grill the english muffins and onions over hot coals for 1 – 2 minutes per side.
