Ingredients
Tacos
- Whole flank steak, 1.5 to 2 lbs
- 3 tbsp - Olive oil
- ¼ cup - McCormick Grill Mates® Chipotle & Roasted Garlic Seasoning
- Flour tortillas
- Chives, chopped (optional)
- Lime wedges (optional)
Chipotle Salsa
- 3 Tomatoes, diced
- 2 Chipotle peppers in adobo sauce
- ½ Red onion, diced
- ½ Green red bell pepper, diced
- 1 tbsp - McCormick® Cilantro Leaves
- 1 tbsp - Lime juice
- 1 tbsp - McCormick Grill Mates® Chipotle & Roasted Garlic Seasoning
Nacho Cheese Sauce
- 3 tbsp - Butter
- 3 tbsp - All purpose flour
- 1 ¾ cup - Whole milk
- 8 oz - Cheddar cheese, shredded
Preparation
- Slice the flank steak in half lengthwise, brush both sides with olive oil and generously season with McCormick Grill Mates® Chipotle & Roasted Garlic Seasoning;
- Make the salsa: Combine all Chipotle Salsa ingredients into a bowl and set aside;
- Make the cheese sauce: In a saucepan, melt the butter and add the flour to make a roux; Add the whole milk and whisk until smooth; Add the shredded cheese and simmer for 10 minutes or until desired consistency;
- Arrange a charcoal fire at the center of your grill by spreading the coals into an even layer; Once all the coal are fully lit, place the two flank steaks directly on the embers and cook for 4 to 6 minutes per side;
- Using BBQ tongs, remove the steaks from your grill making sure to shake off any loose ashes stuck to the meat; Place the steaks on a cutting board and let rest for 5 minutes; Slice both steaks against the grain into 1/4 inch thick slices and set aside for the tacos;
- Assemble your tacos with sour cream, chipotle salsa, steak slices and some cheese sauce; Enjoy!
