Ingredients
Chicken
- Whole chicken, cut into halves
- ¼ cup - Melted butter
Coffee Barbecue Rub
- 1 ½ tbsp - Ground coffee
- 1 tbsp - Smoked paprika
- 2 tbsp - Dark brown sugar
- 1 tbsp - Salt
- 1 tsp - Chili powder
- 1 tsp - Garlic powder
- 1 tsp - Onion powder
- ½ tsp - Ground coriander
Chipotle Butter Glaze
- ½ cup - Butter
- 3 tbsp - El Yucateco Chipotle Hot Sauce
- 1 tsp - Lime juice
Preparation
- Preheat your grill for indirect cooking at 350°F;
- Combine all Coffee Barbecue Rub ingredients in a bowl and mix with your fingers to dissolve any lumps;
- Brush the chicken halves on both side with melted butter then generously season with the Chipotle Dry Rub;
- Place the chicken in your grill opposite to hot coals for indirect cooking and close the lid;
- While the chicken is cooking, combine all Chipotle Butter Glaze ingredients in a sauce pan or cast iron skillet and bring to a boil for 5 minutes;
- Brush the chicken with the Chipotle Butter Glaze every 20 minutes while cooking;
- Once the bird have reached an internal temperature of 165°F (it should take about 1 hour at 350°F), remove from the grill and let rest at room temperature for 10 minutes; Serve and enjoy!
