Ingredients
Chicken
- 1 Whole chicken
- 2 tbsp - McCormick Grill Mates® Montreal Chicken Seasoning
- ½ cup - Unsalted butter, melted
- ¼ cup - Kitchen Basics® Original Chicken Stock
- 1 tbsp - Cognac
Sweet Honey Glaze
- ½ cup - Unsalted butter
- ½ cup - Honey
- 2 tbsp - Ketchup
- 1 tsp - Worcestershire
- ½ tsp - McCormick Grill Mates® Montreal Chicken Seasoning
Preparation
- Preheat your grill for direct grilling at 400°F;
- Using kitchen shears or a sharp knife, remove the chicken’s backbone and make a cut through the breastbone from the inside so the chicken can lay flat like an open book;
- Brush the chicken with the melted butter and generously season with McCormick Grill Mates® Montreal Chicken Seasoning; Repeat on both side;
- In a measuring cup, combine the cognac and chicken stock to the remaining melted butter; Using a marinade injector, inject the bird in both breasts and thighs with the liquid;
- Make the glaze: Combine all Sweet Honey Glaze ingredients in a skillet or saucepan and bring to a boil for 10 minutes;
- Lay the chicken skin side down on your hot grill grate and place a cast iron skillet on top of the bird; Grill for 8 to 12 minutes then flip the bird and put the skillet back on top; Grill for another 8 to 12 minutes;
- One the chicken is fully cooked, brush the bird with sweet honey glaze and grill one more minute for the sauce to caramelise; Remove the chicken from the grill and let rest for 5 minutes before serving.
