Ingredients
- 4 Whitefish fillets
- ¼ cup - Olive oil
- 2 tbsp - Lime juice
- 1 tbsp - Tex-Mex Seasonigs
- Flour tortillas
Mango Salsa
- 1 cup - Mangoes, diced
- ½ cup - Red bell peppers, diced
- ½ cup - Cucumbers, diced
- ⅓ cup - Red onions, diced
- 1 tbsp - Fresh mint, chopped
- 1 tbsp - Lime juice
- 2 tbsp - Olive oil
Spicy Mayo
- 1 cup - Mayonnaise
- 1 tbsp - Sriracha
- ½ tsp - Lime juice
Preparation
- Preheat you grill at medium-high for a direct grilling set up;
- Mix all of the Spicy Mayo ingredients together and set aside in refrigerator;
- Gently mix all of the Mango Salsa ingredients together in a bowl and set aside;
- Brush the fillets with olive oil then add the lime juice and tex-mex seasonings;
- Place the fish fillets on the grill over direct heat and cook for 3 to 4 minutes per side;
- Warm the flour tortillas on the grill grate for about 30 sec per side. Serve and enjoy.
