Ingredients
Chicken Wings
- 5 lb - Chicken wings (about 25 wings)
- 3 tbsp - Vegetable oil
- Sesame seeds and chopped green onions for topping (optional)
Dry Rub
- 3 tsp - Salt
- 4 tsp - Turbinado sugar
- 1 tsp - Black pepper
- 1 tsp - White pepper
- 2 tsp - Onion powder
- 1 tsp - Paprika
General Tso Sauce
- 1 tbsp - Sesame oil
- 2 Garlic cloves, minced
- 1 tsp - Fresh ginger, grated
- 8 Dried chiles
- ½ cup - Sugar
- 1 tsp - Hoisin sauce
- 1 tbsp - Cornstarch slurry
- ¼ cup - Soy sauce
- ¼ cup - Rice wine
- ¼ cup - White vinegar
- ½ cup - Chicken broth
Preparation
- Preheat your grill for a two zone cooking; having hot coals on one half of the grill and nothing on the other;
- Brush the chicken wings with vegetable oil; Combine all Dry Rub ingredients into a bowl then use to season the wings on both side;
- Place the chicken wings on the grill over direct heat for 1 minute per side then move to the indirect zone and close the lid; Cook for 30 to 35 minutes at 350°F;
- Make the sauce: in a saucepan or cast iron skillet, sauté the garlic, ginger and dried chiles in the sesame oil for 2 minutes then add all remaining General Tso Sauce ingredients and bring to a boil for 10 minutes;
- Transfer the grilled wings into the sauce pan and mix to apply an equal coating; Serve with chopped green onions and sesame seeds (optional); Enjoy.
