Ingredients
- 8 Jalapeños
- 2 cup - Cooked macaroni
- 8 Slices of bacon
- ⅓ cup - Butter, melted
- ⅓ cup - All purpose flour
- 1 cup - Cooking cream
- 6 oz - American cheese
- 4 oz - Jack cheese
- ¼ cup - Beer
- 1 tbsp - Chipotle in adobo sauce, chopped
- 1 tsp - Orange zest
- ½ tsp - Black pepper
- 1 cup - Wood chips for smoking
Preparation
- Preheat your grill for indirect;
- In a large saucepan, met the butter over medium heat and stir in he flour to make a roux; Add the cooking cream and american cheese and whisk until the cheese is melted completely; add the jack cheese, beer, chipotle, orange zest and black pepper and simmer until you get a semi thick cheese sauce; Add the cooked macaroni and stir well;
- Cut each jalapeño in half and remove the interior with a spoon; Fill each jalapeño with mac and cheese, then wrap with bacon;
- Place the poppers on the grill for indirect and toss a cup of wook chips onto hot coals for smoking; Close the lid and cook for around 30 minutes at 350°F; Serve and enjoy.
