Ingredients
- 2 lb - Chicken wings
- 2 tbsp - Canola oil
- 2 tbsp - Paprika
- 2 tbsp - Brown sugar
- ½ tbsp - Cayenne powder
- ½ tbsp - Salt
- ½ tbsp - Black pepper
- 1 cup - Shredded cheddar cheese
- 1 cup - Shredded mozzarella cheese
- ¼ cup - Red onions, chopped
- ¼ cup - Pickled hot peppers
- 2 tbsp - BBQ sauce
- Juice from half a lime
- Hickory wood chips (optional)
Preparation
- Preheat your grill for medium heat;
- Mix the wings with canola oil, then season with paprika, brown sugar, cayenne powder, salt and pepper;
- Grill the wings over direct heat for about 8 to 12 minutes per side with the lid close; Stay close to the grill and rotate the wings frequently if needed to prevent them from burning;
- In a cast iron skillet, place the wings vertically next to the edge of the skillet to hold them in place then fill the entire pan; Cover with cheese, chopped red onions, pickled hot peppers, a line of BBQ sauce and the juice from half a lime;
- Cook in indirect for 8 more minutes or until the cheese have melt evenly;
Serve with ranch or blue cheese dipping
