Ingredients
- 20 to 30 chicken wings
- 1 tbsp - Sesame oil
- 1 tsp - Ground coriander
- 1 tsp - Salt
- 1 tsp - Black pepper
Pepper Jack sauce
- 3 tbsp - Salted Butter
- 3 tbsp - Flour
- 3 tbsp - Heavy cream
- 3 cup - Monterey Jack cheese
- 1 cup - Cayenne hot sauce
- 6 sliced jalapeños
Preparation
- Preheat your grill for indirect;
- In a bowl, mix the sesame oil, ground coriander, salt and pepper together with the chicken wings, then place the wings on the grill and sear 2 to 3 minutes per side over hot coals;
- Move to wings to indirect and cook for about 20 minutes at 350°F;
- In a preheated cast iron skillet, mix the salted butter, flour and heavy cream together, then add the monterey jack cheese and whisk until the cheese have melted. Add the cayenne hot sauce and sliced jalapeños, then simmer for 10 minutes over medium heat;
- Pour half of the Pepper Jack sauce over the wings and reserve the rest for a dipping sauce.
