Ingredients
Burgers
- 1 ½ lb - Ground beef
- ¼ cup - Steak sauce
- ½ tbsp - Ground black pepper
- 4 Slices of pepper jack cheese
- 4 Burger buns
- Lettuce, tomatoes and your favorite choice of condiments
Rings of Fire
- 1 Large onion
- 1 lb - Hardwood smoked bacon
- 4 oz - Habanero hot sauce
Preparation
- Combine the bacon and habanero hot sauce and let marinate in the refrigerator for 1 to 2 hours;
- Preheat your grill for a two zone cooking – having hot coals on one half and nothing on the other;
- Cut the onion into onion rings of about 1 inch think; Wrap the marinated bacon slices around each onion rings – it may take up to 3 slices per ring;
- Place the bacon rings for indirect grilling and toss a handful of wood chips onto hot coals for smoking; Cook for 30 minutes at between 350°F and 400°F;
- Mix the ground beef, steak sauce and ground pepper and form 4 equal burger patties;
- Place the patties on the grill over direct heat and cook for 3 to 4 minutes per side; Add the cheese about 1 minutes before removing the burgers from the grill;
- Assemble with grilled burger buns, bacon rings and your favorite choice of condiments.
