Ingredients
Short Ribs
- Beef short ribs, 2-bone rack
- 1 tbsp - Salt
- 1 tbsp - Black pepper
- ½ tbsp - Garlic powder
- ¾ cup - Stubb's Original Bar-B-Q Sauce
- Hickory wood chunks for smoking
Pizza
- Pizza dough
- ¼ cup - Pizza flour
- ½ cup - Pizza sauce
- 2 cup - Mozzarella cheese, shredded
- ¼ White onion, sliced
- 1 Jalapeño pepper, sliced
- ½ cup - Crumbled bacon
- 3 tbsp - Stubb's Original Bar-B-Q Sauce
Preparation
- Preheat you grill for indirect cooking at 275°F;
- Season the short ribs on both side with salt, black pepper and garlic powder; Place the ribs in your grill over indirect heat and toss a few wood chunks onto hot coals for smoking; Close the lid and cook for 2 hours at 275°F;
- Generously brush the ribs with ¾ cup of Stubb’s Original Bar-B-Q Sauce and wrap into aluminium foil; Place he ribs back into the grill for another 2 hours of indirect cooking at 275°F;
- Once the ribs are fully cooked, remove from the grill and let rest for about 20 minutes at room temperature; Using heat resistant kitchen gloves or 2 forks, pull the beef ribs apart into medium chunks and set aside for the pizza;
- Pour an additional chimney of hot coals in your grill and place a pizza stone in the center of the grill grate; Close the lid and preheat to 400°F;
- Flatten the pizza dough onto a floured surface; Turn and stretch with a dough roller to form a round pizza shape of about ½ inch thick; Transfer the dough to a lightly floured pizza peel; Top the pizza with pizza sauce, mozzarella cheese, jalapeños, onions, crumbled bacon and beef ribs chunks;
- Transfer the pizza to the pizza stone and cook for 10 to 15 minutes;
- Remove the pizza from the stone and pour a few lines of Stubb’s Original Bar-B-Q Sauce on top; Slice and serve.
