Ingredients
- 8 oz - Sirloin steak, sliced into 1/4 thick stripes
- 6 Slices of thick bacon
- ¼ cup - Onions, diced
- 1 ⅓ cup - Pinto beans
- 1 ⅓ cup - Red kidney beans
- 1 ⅓ cup - Black beans
- 2 tbsp - Kentucky straight bourbon
- ¼ cup - Brown sugar
- ½ cup - Ketchup
- ¼ cup - Molasses
- 1 ½ tbsp - Dijon mustard
- 3 tbsp - Steak sauce
- ¼ cup - Apple cider vinegar
- 2 tbsp - Worcestershire sauce
- 1 tbsp - Onion powder
- ½ tbsp - Steak seasoning
- ¼ cup - Dark beer
- ½ tsp - Liquid smoke

Preparation
- Preheat your smoker at 250°F;
- Slice the bacon into stripes of about a ¼ inch thick and place into a preheated cast iron skillet over high heat; cook until the bacon is almost done then add the onions and the sliced sirloin steak for a couple more minutes; turn off the heat then add all the remaining ingredients into the skillet and give a good mix;
- Place the skillet inside the smoker and cook for about 1h30 to 2h00 using hickory, oak or apple wood chunks.
Suggestion: Serve with tortilla chips or roasted Texas toast
