Ingredients
- 1 lb - Bacon (approx 14 slices)
- 1 lb - Pork saussage
- 1 lb - Ground beef
- 1 cup - Shredded cheddar cheese
- 4 Chopped Jalapeños (seeded)
- 1 Chopped red onion
- ¼ cup - chopped green onions
- 2 tbsp - Paprika
- 2 tbsp - Brown sugar
- 1 tbsp - Ground black pepper
- 1 tbsp - Salt
- 1 tsp - Cumin
- ¼ cup - BBQ sauce
- Hickory and oak wood chunks
Preparation
- Preheat your smoker at 300°F;
- Use all 14 bacon slices to make a bacon weave;
- Mix the paprika, brown sugar, cumin, black pepper and salt together, then pour some over the bacon weave;
- Mix the ground beef and pork sausage in a bowl and lay down the mixture over the bacon weave, then add the shredded cheddar cheese, sliced jalapenos, chopped red and green onions;
- Roll up the fatty;
- Pour some of the rub on the fatty;
- Cook for about 3h at 300 – 350°F with hickory and oak wood chunks. Internal temperature of the meat should read 165°F when ready;
- Glaze with BBQ sauce and sear over hot coals (optional).
