Ingredients
Salmon Steaks
- 4 Salmon steaks, about 1¼-inch thick
- ¼ cup - Extra virgin olive oil
- 3 tbsp - Kosher or coarse sea salt
- 1 ½ tbsp - Freshly cracked black pepper
- 1 tsp - Granulated garlic
- 1 tsp - Granulated onion
- 1 tsp - Ground coriander seeds
- ½ tsp - Ground ginger
Lemon Dill Sauce
- ½ cup - Plain Greek yogurt
- ½ cup - Mayonnaise
- 1 Lemon, juice and zest
- 2 tbsp - Fresh dill, chopped
- 1 Clove garlic, minced
- 1 tsp - Kosher or coarse sea salt
- ½ tsp - Freshly cracked black pepper
Preparation
Salmon Steaks
- Set your Memphis Grill to Medium flame with the direct flame insert. We recommend using a blend of oak and apple wood pellets.
- Combine all dry ingredients in a bowl. Brush salmon steaks on both sides with extra virgin olive oil and season the dry seasoning.
- Place salmon steaks on the grill and cook with the lid open until the internal temperature of the meat reaches 145°F, flipping steaks halfway through cooking.
- Let rest for 5 minutes at room temperature. Serve for lemon dill sauce.
Lemon Dill Sauce
- Combine all ingredients in a bowl. Store in the refrigerator until ready to serve.
